Method
 

Step-by-Step Instructions
  1. Begin by patting your cod fillets dry with paper towels to remove excess moisture.
  2. In a medium mixing bowl, combine all-purpose flour, ground coriander, paprika, ground cumin, salt, black pepper, and red pepper flakes. Stir well until fully blended.
  3. Preheat your oven to 400°F (204°C).
  4. In a separate bowl, whisk together freshly squeezed lemon juice, extra virgin olive oil, and melted unsalted butter. Then, add the minced garlic to this mixture and combine well.
  5. Take each cod fillet, dip it into the lemon-garlic mixture first, then dredge in the flour-spice mixture.
  6. Heat a tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the coated cod for about 2 minutes on each side, or until golden brown.
  7. Once your cod is seared, pour the remaining lemon-garlic sauce over the fillets in the skillet.
  8. Transfer the skillet to your preheated oven and bake for 8-10 minutes, checking for doneness.
  9. Once done, remove your skillet from the oven and let it rest. Garnish with freshly chopped parsley.
