- Begin by patting your cod fillets dry with paper towels to remove excess moisture.
- In a medium mixing bowl, combine all-purpose flour, ground coriander, paprika, ground cumin, salt, black pepper, and red pepper flakes. Stir well until fully blended.
- Preheat your oven to 400°F (204°C).
- In a separate bowl, whisk together freshly squeezed lemon juice, extra virgin olive oil, and melted unsalted butter. Then, add the minced garlic to this mixture and combine well.
- Take each cod fillet, dip it into the lemon-garlic mixture first, then dredge in the flour-spice mixture.
- Heat a tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the coated cod for about 2 minutes on each side, or until golden brown.
- Once your cod is seared, pour the remaining lemon-garlic sauce over the fillets in the skillet.
- Transfer the skillet to your preheated oven and bake for 8-10 minutes, checking for doneness.
- Once done, remove your skillet from the oven and let it rest. Garnish with freshly chopped parsley.
