  • 1 teaspoon Dried Oregano Can swap with double the amount of fresh oregano.
  • 1 medium Fresh Lemon Use both zest and juice to enhance flavor.

For Cooking
  • 2 tablespoons Olive Oil Avocado oil can also work.
For Garnishing

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with olive oil or line it with parchment paper.
  3. Chop red onion and cherry tomatoes into bite-sized pieces.
  4. Spread chopped red onion and cherry tomatoes evenly across the bottom of the baking dish.
  5. Sprinkle olives, capers, minced garlic, dried oregano, salt, and black pepper over the vegetables.
  6. Pat cod fillets dry, season with salt and black pepper, then arrange them on top of the vegetable layer.
  7. Drizzle olive oil and sprinkle fresh lemon zest over the cod and vegetables.
  8. Bake for about 20 minutes until the cod flakes easily with a fork.
  9. Remove from oven, squeeze fresh lemon juice over the top, and garnish with freshly chopped parsley.
