Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Dice the red bell pepper, slice the red onion, and mince the garlic. Halve the tomatoes and gather in a mixing bowl.
  3. Combine oregano, thyme, salt, black pepper, and red pepper flakes in a small bowl, mixing well.
  4. In an oven-safe dish, arrange the diced bell pepper, sliced onion, minced garlic, and halved tomatoes. Crumble feta cheese over the top.
  5. Drizzle olive oil over the vegetables and feta, then sprinkle with the spice mix.
  6. Bake for approximately 25 minutes until vegetables are tender and feta begins to melt.
  7. Stir the mixture gently and add fresh spinach, mixing until wilted.
  8. Create small wells in the mixture and crack the eggs into the wells.
  9. Zest fresh lemon over the dish and bake for an additional 8-10 minutes until egg whites are set and yolks are runny.
  10. Let the dish rest for 2 minutes, then garnish with fresh basil before serving.
