For the Tzatziki and Veggies
  • 2 medium Persian cucumbers Regular cucumbers can be used.
  • 1 medium Avocado Substitute with cooked chickpeas for vegetarian version.
  • 2 tbsp Lemon juice Use lime juice as a substitute.
  • 1 tbsp Fresh dill Parsley or mint can be alternated.
  • 1 cup Feta cheese Crumbled goat cheese can replace feta.
  • 1/2 cup Peperoncini Optional.
  • 1 cup Cherry tomatoes Replace with diced bell peppers if unavailable.
  • 1 medium Red onions Omitted for a milder taste.
For Serving

Method
 

Marinate and Bake Chicken
  1. In a large mixing bowl, combine full-fat Greek yogurt, extra virgin olive oil, minced garlic, finely chopped shallots, smoked paprika, fresh oregano, chili flakes, kosher salt, and black pepper. Add the cubed chicken into the marinade, ensuring it’s well coated. Allow it to marinate for at least 15 minutes or overnight for best results.
  2. As the chicken marinates, preheat your oven to 425°F (220°C).
  3. Once marinated, arrange the chicken on a baking sheet lined with parchment paper or foil for easy cleanup. Bake for 15 minutes, then flip the chicken pieces over. Continue baking for an additional 5-10 minutes until cooked to an internal temperature of 165°F (75°C).
  4. For an extra char, broil for 1-2 minutes towards the end.

  1. While the chicken cooks, chop Persian cucumbers and avocado, then mix them in a smaller bowl with lemon juice, fresh dill, a pinch of salt, and black pepper.
