Step‑by‑Step Instructions
  1. Start by bringing a large pot of salted water to a rolling boil. Add your choice of pasta and cook according to the package directions, typically around 8-10 minutes, until al dente.
  2. While the pasta is cooking, wash and prepare your vegetables. Dice the cucumbers, halve the cherry tomatoes, and slice the red onion. If you'd like a milder taste, soak the sliced onion in cold water.
  3. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar (or lemon juice), minced garlic, and a pinch of salt and pepper.
  4. Once the pasta is perfectly cooked, drain it in a colander and rinse briefly under cold water. Add the cooled pasta to the mixing bowl with the prepped vegetables.
  5. Crumble feta cheese over the pasta mixture, followed by the freshly chopped parsley and basil.
