  2. Gradually add cornstarch to the mixture. Start mixing with a spatula, then knead the dough by hand until smooth, about 2-3 minutes.
  3. Divide dough into two logs, slice each log into ¼-inch pieces.
  4. Shape each slice into a ball, place on a parchment-lined baking sheet, and flatten with a fork.
  5. Refrigerate the cookies for 30 minutes to 1 hour.
  6. Preheat your oven to 350°F (175°C) while the cookies chill.
  7. Bake the cookies for 10 to 12 minutes until golden underneath but pale on top.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
