Step-by-Step Instructions for Mexican Barbecue Chicken Skewers
- In a large mixing bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of lime juice, 2 tablespoons of soy sauce, and the spices: 3 tablespoons of Mexican chili powder, 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1 tablespoon of honey until smooth.
- Add 1.5 lbs of cubed boneless, skinless chicken breast to the marinade, making sure each piece is coated evenly. Cover the bowl with plastic wrap and refrigerate it for at least 1 hour.
- Preheat your grill to medium-high heat, aiming for about 400°F. Lightly oil the grates with a paper towel dipped in vegetable oil to prevent sticking.
- Once the chicken is marinated and your grill is ready, thread the chicken pieces onto the soaked wooden skewers.
- Carefully place the skewers on the preheated grill. Cook for about 10-15 minutes, turning them occasionally.
