  • 1 cup Bell peppers chopped, any color
  • 1 cup Spinach fresh, chopped
  • 1 cup Cheese shredded, any favorite
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a muffin tin with nonstick spray.
  2. Fill each muffin cup with frozen tater tots, pressing them down to form a crust. Bake for 15 minutes until golden brown.
  3. Whisk the eggs in a mixing bowl, add salt and pepper.
  4. Fold in the chopped bell peppers and spinach into the egg mixture.
  5. Pour the egg and veggie mixture over the baked tater tot crusts, filling each cup nearly full.
  6. Bake for an additional 15 to 20 minutes until puffed and golden brown.
  7. Let cool for a few minutes before removing from the tin. Serve warm.
