- Fill each muffin cup with frozen tater tots, pressing them down to form a crust. Bake for 15 minutes until golden brown.

- Fold in the chopped bell peppers and spinach into the egg mixture.
- Pour the egg and veggie mixture over the baked tater tot crusts, filling each cup nearly full.
- Bake for an additional 15 to 20 minutes until puffed and golden brown.
