  • 3 tablespoons Soy Sauce substitute with tamari for gluten-free
  • 1 tablespoon Dark Soy Sauce sweet soy sauce or hoisin sauce can be used
  • 1 teaspoon Red Pepper Flakes adjust quantity to taste
  • 2 tablespoons Brown Sugar
  • 1/2 cup Water used to adjust consistency
  • 1 tablespoon Cornstarch can substitute with potato or tapioca starch
For the Stir-Fry
  • 1 tablespoon Oil for stir-frying vegetables
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 2 cups Bell Pepper use a mix of colors
  • 1 cup Broccoli can be replaced with other vegetables
  • 2 cans Canned Chickpeas drained
  • 3 stalks Green Onions reserve some for garnish
  • 2 tablespoons Sesame Seeds for garnish

Method
 

Step-by-Step Instructions
  1. Prepare the Sauce: In a medium bowl, whisk together soy sauce, dark soy sauce, red pepper flakes, brown sugar, water, and cornstarch until smooth and well combined. Set aside.
  2. Cook Aromatics: Heat a tablespoon of oil in a large skillet over medium heat. Add minced ginger and garlic, stirring constantly for 1-2 minutes until aromatic.
  3. Stir-Fry Vegetables: Add sliced bell peppers and broccoli, stir to coat, season with salt, cover, and cook for 2-4 minutes.
  4. Combine with Sauce: Pour in the prepared sauce and drained chickpeas, stir to combine, cover, and cook for 2-3 minutes until bubbling.
  5. Finish the Dish: Simmer for an additional minute, fold in chopped green onions, check seasoning, and adjust if necessary.
  6. Serve: Plate over rice or quinoa or tuck into lettuce wraps, garnish with sesame seeds and green onion tops.
