Step-by-Step Instructions for Blackened Corn
  1. Start by patting dry your corn kernels with paper towels, ensuring they’re not overly wet.
  2. In a small bowl, combine salt, black pepper, smoked paprika, onion powder, and garlic powder. Whisk these dry ingredients together.
  3. Place a cast iron skillet over medium-high heat and add olive oil along with a pat of butter. Heat for about 2 minutes.
  4. Add the prepared corn to the skillet, and sprinkle the seasoning mixture evenly over the top. Stir gently to coat.
  5. Spread the corn evenly and press it down with a spatula. Cook undisturbed for about 2-3 minutes, until browned.
  6. After the initial cooking time, stir the corn and press down again. Cook for another 3-4 minutes until golden-brown.
