Preparation Steps

  2. Preheat oven to 375°F (190°C). Spread grated carrots on a baking sheet. Roast for 20 minutes, tossing halfway.

  4. Combine flour and baking soda in another bowl. Fold flour mixture into wet ingredients, then add carrots, oats, pecans, and coconut.
