Preparation Steps
- In a medium bowl, combine cream cheese, powdered sugar, orange zest, and vanilla extract. Mix until smooth and refrigerate.
- Preheat oven to 375°F (190°C). Spread grated carrots on a baking sheet. Roast for 20 minutes, tossing halfway.
- In a large bowl, melt butter until golden brown. Whisk in sugars, salt, egg, and vanilla. Mix until smooth.
- Combine flour and baking soda in another bowl. Fold flour mixture into wet ingredients, then add carrots, oats, pecans, and coconut.
- Scoop about 2 tablespoons of dough, form a ball, make an indentation, fill with cream cheese filling, and seal the dough.
- Chill shaped cookies in the refrigerator for at least 1 hour.
- Preheat your oven to 325°F (163°C). Line baking sheets with parchment paper. Bake for 14-16 minutes.
- Let cookies rest for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.
