Prepare the Filling
- In a large skillet, heat 2 tablespoons of oil over medium heat. Once shimmering, add cumin seeds and coriander seeds, cooking until fragrant, approximately 30 seconds. Stir in chopped red onion and green chili. Sauté until the onion is translucent, about 5 minutes, then mix in turmeric, ground cumin, and ground coriander.
Add Potatoes
- Stir in cubed potatoes and water. Cover and pressure-cook in an Instant Pot for 5-6 minutes, or cook on stovetop until softened. Mash some potatoes for a creamy texture, then fold in frozen peas, chopped cilantro, fresh mint, and lemon juice.
Form the Pie
- Thaw the puff pastry sheets, roll to fit your baking dish, and place half on a parchment-lined baking sheet. Spoon the potato filling on top. Sprinkle with baby greens if desired, cover with the other half of the pastry. Seal edges and create slits for venting.
Bake the Pie
- Preheat oven to 400°F (205°C). Bake the assembled Vegan Samosa Pie for 18-22 minutes or until golden brown. Cool for a few minutes before slicing.
