Ingredients
  

For the Meatloaf
  • 1 lb Ground Beef use lean for a healthier option
  • 1 Onion diced, fresh yellow or white
  • 1 Carrot grated or finely diced
  • 2 cloves Garlic minced
  • 1 cup Italian Breadcrumbs gluten-free options available
  • 1/2 cup Milk or almond milk for dairy-free
  • 1 Egg or flax egg for vegan
  • 1/4 cup Grated Parmesan Cheese optional
  • 2 tbsp Worcestershire Sauce or vegan alternative
  • to taste Spices (Salt, Basil, Oregano, Pepper, Red Pepper Flakes, Thyme, Parsley) adjust as preferred
For the Glaze
  • 1/2 cup Ketchup
  • 2 tbsp Brown Sugar adjust for sweetness
  • 1 tbsp Worcestershire Sauce
For the Mummy Wrap
  • 1 sheet Puff Pastry rolled out
  • 4 Mini Bocconcini or Radishes for mummy eyes
  • to taste Black Peppercorns or Olives for pupil decoration
For the Boo-tatoes
  • 2 lbs Potatoes Yukon Gold preferred
  • 4 tbsp Butter or to taste
  • 1/2 cup Cream optional sour cream or Greek yogurt for lighter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with tin foil.
  2. In a large mixing bowl, combine all meatloaf ingredients and mix until just combined.
  3. Shape meat mixture into 6 to 8 rounded portions and place on the prepared baking sheet.
  4. Cover the meatloaf with tin foil and bake for about 30 minutes.
  5. Prepare the glaze by mixing ketchup, brown sugar, and Worcestershire sauce.
  6. Remove the foil and brush each portion of meatloaf with the glaze.
  7. Return to the oven for an additional 15 minutes until caramelized.
  8. Wrap meatloaf portions with puff pastry strips to mimic mummy bandages.
  9. Bake until internal temperature reaches 160°F (71°C), about 10 to 15 minutes.
  10. Peel and chop the Yukon Gold potatoes, boil until fork-tender, then mash with butter and cream.
  11. Shape mashed potatoes into playful ghost figures for serving.
