- Clean mussels by rinsing them thoroughly. Remove any beards and discard any open shells. Scrub under running water to eliminate grit.
- Prep ingredients: finely chop onion, tomato, and mince the garlic. Grate ginger and measure out other ingredients.
- Cook aromatics by heating vegetable oil and sesame oil in a large pan. Sauté garlic, onion, and ginger for about 3 minutes.
- Add miso and tomato to the sautéed mixture and cook for an additional 2 minutes.
