Step-by-Step Instructions
  1. Clean mussels by rinsing them thoroughly. Remove any beards and discard any open shells. Scrub under running water to eliminate grit.
  2. Prep ingredients: finely chop onion, tomato, and mince the garlic. Grate ginger and measure out other ingredients.
  3. Cook aromatics by heating vegetable oil and sesame oil in a large pan. Sauté garlic, onion, and ginger for about 3 minutes.
  4. Add miso and tomato to the sautéed mixture and cook for an additional 2 minutes.
  5. Pour in broth, fish sauce, and mirin. Bring to a boil, add mussels, cover, and let simmer for 8-10 minutes.
  6. Once mussels open, remove from heat. Stir in cream and butter, adjusting seasoning with salt and pepper.
  7. Garnish with chives and chili. Serve immediately with crusty bread.
