  • 1 cup Graham Crackers or Digestive Biscuits
  • 4 tablespoons Unsalted Butter melted
For the Filling
  • 2 cups Fresh or Frozen Blueberries thawed and drained if frozen
  • 1/4 cup Chia Seeds adjust for thickness
  • 1/4 cup Granulated Sugar or Sweetener
  • 1 cup Greek Yogurt or Cream Cheese
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Salt
Optional Garnishes
  • 1/2 cup Fresh Blueberries
  • 1 teaspoon Lemon Zest
  • Mint Leaves for garnish

Method
 

Preparation
  1. Crush graham crackers in a food processor until fine. Mix with melted butter in a bowl and press into a 9-inch pie dish. Chill for 15 minutes.
  2. Mash blueberries with a fork or blend until smooth. In another bowl, whisk together chia seeds, sugar, lemon juice, and salt. Fold in mashed blueberries and Greek yogurt. Let sit for 5-10 minutes to thicken.
  3. Spoon the filling into the chilled crust and smooth the top. Chill for at least 2 hours or overnight until set.
  4. Garnish with fresh blueberries, lemon zest, or mint leaves before serving. Slice with a warm knife and enjoy cold.
