Method
 

Step-by-Step Instructions
  1. Prepare the dough by combining pecans, soaked dates, coconut sugar (or monk fruit), sea salt, vanilla extract, and cinnamon in a food processor. Pulse until a sticky dough forms.
  2. Shape the bites by taking small portions of dough and rolling them into 1-inch balls. Place them on a lined cookie sheet.
  3. Chill the bites in the freezer for about 15 minutes to firm them up.
  4. Melt the chocolate by setting a heatproof bowl over simmering water and stirring until smooth. Add a tablespoon of coconut oil for a silky coating.
  5. Coat each bite in melted chocolate and place back on the lined cookie sheet. Optionally, press a pecan half on top of each.
  6. Return coated bites to the freezer for about 30 minutes to harden.
  7. Serve immediately or store in an airtight container in the freezer.
