- Prepare the dough by combining pecans, soaked dates, coconut sugar (or monk fruit), sea salt, vanilla extract, and cinnamon in a food processor. Pulse until a sticky dough forms.
- Shape the bites by taking small portions of dough and rolling them into 1-inch balls. Place them on a lined cookie sheet.
- Chill the bites in the freezer for about 15 minutes to firm them up.
- Melt the chocolate by setting a heatproof bowl over simmering water and stirring until smooth. Add a tablespoon of coconut oil for a silky coating.
- Coat each bite in melted chocolate and place back on the lined cookie sheet. Optionally, press a pecan half on top of each.
- Return coated bites to the freezer for about 30 minutes to harden.
- Serve immediately or store in an airtight container in the freezer.
