Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and a large baking pan.
  2. In the prepared baking pan, combine chopped bell peppers, sliced zucchini, and sliced red onion. Add halved cherry tomatoes and Kalamata olives.
  3. Drizzle olive oil over the vegetable mixture. Sprinkle dried oregano, garlic powder, salt, and black pepper evenly across the top. Toss everything together to ensure each piece is well-coated.
  4. Spread the seasoned vegetable mixture evenly across the pan. Roast for about 20 minutes until they are tender and slightly golden.
  5. If using feta cheese, take the pan out after 20 minutes and sprinkle crumbled feta evenly on top. Return to the oven for an additional 5 minutes.
