Method
 

  1. In a large mixing bowl, add rolled oats, almond milk, vanilla extract, ground cinnamon, and maple syrup if desired. Stir the mixture thoroughly for about 1-2 minutes until well combined.
  2. Gently fold in the diced ripe peaches and Greek yogurt, using a spatula to combine for about 1 minute.
  3. Evenly divide the oat mixture into four mason jars or airtight containers, leaving a little space at the top.
  4. Place the sealed jars in the refrigerator and chill overnight, or for at least 4 hours.
  5. In the morning, stir the oats and enjoy cold or warm in the microwave for a few seconds. Top with chopped nuts.
