- Begin by shaping the ground beef into four equal patties, each about 1/3 lb. Season both sides generously with your favorite burger rub. Place the patties on a plate and let them sit at room temperature for 15 minutes.
- In a large skillet over medium heat, cook the chopped bacon until crispy, approximately 6-8 minutes, then remove and let it drain on paper towels.
- Preserve 1 tablespoon of bacon fat in the skillet, then add diced onion. Sauté for 4-6 minutes until they become translucent and fragrant.
- To the skillet with the sautéed onion, add the crispy bacon, pickled jalapeños, grape jelly, apple cider vinegar, honey, and brown sugar. Stir and cook over low heat for 5-10 minutes until thickened.
- Preheat your grill to medium-high heat. Grill the seasoned patties for about 4-5 minutes on each side until they reach your desired doneness.
- After flipping the patties for the second time, move them to indirect heat. Place a slice of American cheese on top of each patty and close the grill lid.
- Spread crunchy peanut butter generously on the top bun. Place the cheese-topped burger patty on the bottom bun, followed by a heaping spoonful of the homemade bacon jam. Finish by placing the top bun over the jam.
