- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix granulated sugar, light corn syrup, melted butter, vanilla extract, and the egg until smooth. Reserve 2 tablespoons of this mixture.
- Fold in the chopped pecans into the filling mixture until well coated.
- Unroll the crescent dough on the baking sheet. Place 2-3 tablespoons of pecan filling on the wide end of each triangle.
- Roll each triangle from wide end to narrow tip and pinch edges to seal.
- Bake in the oven for 8 minutes, brush tops with reserved mixture, then bake for an additional 5 minutes until golden brown.
- Let cool slightly and sprinkle with additional pecans before serving warm.
