Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather the rest of your ingredients.
  2. In a mixing bowl, combine chopped pistachios, honey, fresh rosemary, sea salt, and black pepper. Stir until well incorporated.
  3. Roll out your chilled puff pastry to about 1/8 inch thick and cut into 3x3-inch squares.
  4. Place a piece of Brie in the center of each pastry square and top with the pistachio mixture. Fold the pastry corners over the filling.
  5. Beat an egg to create an egg wash. Brush the tops of each bite with the egg wash.
  6. Arrange the bites on a parchment-lined baking sheet and bake for 15-20 minutes until golden brown.
