  • 1 cup Onions Red, yellow, or white
  • 2 medium Yellow Potatoes Can substitute with sweet potatoes
  • 1 lb Lean Ground Meat (turkey, chicken, or beef) Choose based on preference
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 4 large Eggs
  • 1/2 cup Egg Whites
  • 1 cup Cottage Cheese Greek yogurt can be used
For the Cheese Topping
  • 1 cup Shredded Cheddar Cheese Different varieties can be used
For the Wrap
  • 4 large Tortillas Whole wheat or gluten-free if desired
For Garnish
  • 1/4 cup Fresh Chopped Cilantro Can be substituted with parsley

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Spread diced bell peppers, onions, and yellow potatoes on a large sheet pan with olive oil and seasonings. Roast for about 20-25 minutes.
  3. Add lean ground meat on top of roasted vegetables, season, and return to the oven for an additional 10-15 minutes until cooked through.
  4. Blend eggs, egg whites, and cottage cheese in a mixing bowl until smooth. Set aside until meat is cooked.
  5. Pour the egg and cottage cheese mixture over meat and vegetables, sprinkle with cheese, and bake for 15-20 minutes until set.
  6. Cool slightly, slice into portions, and prepare for wrapping.
  7. Assemble burritos by placing filling in a tortilla, drizzling with sauce, and rolling tightly.
  8. Wrap each burrito tightly in foil or plastic wrap and freeze for up to three months.
