  • 1/4 teaspoon Salt necessary for flavor enhancement
Crust Ingredients
  • 1/2 cup Butter unsalted preferred
  • 1/4 cup Granulated Sugar can substitute with confectioners' sugar
  • 1 cup Flour all-purpose is best
  • 1 teaspoon Vanilla Extract use pure for best results

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x9 inch baking pan lined with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until fluffy.
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. Whisk together flour, salt, and cornstarch in another bowl. Gradually add to the butter mixture until a soft dough forms.
  5. Press the dough evenly into the prepared pan and bake for 15 minutes until golden brown.
  6. Whisk together all filling ingredients until smooth.
  7. Pour the pumpkin filling over the crust and bake at 400°F (200°C) for 15 minutes, then reduce to 350°F (175°C) for 40 minutes.
  8. Let the bars cool at room temperature for 45-60 minutes, then chill in the refrigerator for at least 3 hours.
  9. Slice into squares and serve topped with whipped cream and a sprinkle of nutmeg.
