  • 1/4 cup low-sodium soy sauce substitute with tamari for gluten-free
  • 1 tablespoon cornstarch acts as a thickening agent
  • 3/4 cup low-sodium chicken stock substitute with water if stock isn't available
  • 1 tablespoon rice vinegar substitute with lemon juice
  • 1 tablespoon brown sugar can be replaced with honey or maple syrup
  • 2 cloves garlic fresh is best, or use garlic powder
For the Stir-Fry
  • 1 pack ramen noodles instant ramen works best; discard flavor packets.
  • 2 tablespoons cooking oil light cooking oil such as canola or vegetable oil
  • 1 pound boneless, skinless chicken breast can substitute with chicken thighs
  • 2 cups broccoli florets fresh or frozen both work
For Garnishing
  • green onions optional, can replace with chives
  • white sesame seeds optional, can use toasted sesame seeds

Method
 

Step-by-Step Instructions
  1. Whisk together the sauce ingredients in a medium bowl and set aside to thicken.
  2. Bring a pot of water to a boil and cook instant ramen noodles for 3-4 minutes. Drain and rinse with cold water.
  3. Heat oil in a skillet over medium-high heat, add diced chicken, cooking until golden brown (5-7 minutes).
  4. Add broccoli florets to the skillet and stir-fry for 2-3 minutes until bright green.
  5. Toss in cooked noodles and sauce, mixing well for about 2 minutes until everything is coated.
  6. Serve immediately, garnished with green onions and sesame seeds.
