Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with foil or grease it.
  2. Melt 1/2 cup of butter in microwave for about 1 minute, allowing to cool slightly.
  3. Whisk in 1/2 cup granulated sugar, 1/4 cup light brown sugar, and 1 tsp vanilla extract until combined.
  4. Add 1 cup flour, 3/4 cup rolled oats, and a pinch of salt, stirring until well combined. Reserve 1 cup for topping.
  5. Press remaining mixture into the bottom of the prepared pan to form a crust.
  6. Spread 1 cup of raspberry preserves over the crust evenly.
  7. Sprinkle the reserved crumble mixture over the raspberry layer.
  8. Bake for about 30 minutes, until edges are set and center is lightly golden.
  9. Cool on a wire rack for at least 2 hours before slicing into squares.
