Preparation
- Macerate the rhubarb by washing and dicing it, then tossing it with sugar and letting it sit for 10–15 minutes.
- Prepare the cream cheese filling by beating together cream cheese, egg, vanilla extract, and flour until smooth.
- Roll out the puff pastry to about 1/8 inch thick and slice into 4x4 inch squares.
- Assemble the twists by placing cream cheese mixture and rhubarb in the center of each pastry square, then twisting and shaping.
- Bake in a preheated oven at 375°F for 20–25 minutes until golden brown.
- Cool the twists on a wire rack for 5–10 minutes before serving warm.
