- Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, then gradually add flour, baking soda, and salt until just combined.
- In a separate bowl, beat the cream cheese with the granulated sugar until smooth and creamy.
- Scoop tablespoon-sized mounds of cookie dough, flatten slightly, and place a dollop of cheesecake filling in the center. Fold the dough around the filling and place on the baking sheet.
- Bake for about 14 minutes until edges are golden but centers are still soft. Allow to cool on baking sheet for 10 minutes.
- Drizzle with salted caramel sauce once cookies are completely cool.
