  • 1 large Egg
For the Cheesecake Filling
  • 8 ounces Cream Cheese softened

For the Topping
  • 1 cup Salted Caramel Sauce store-bought or homemade

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, then gradually add flour, baking soda, and salt until just combined.
  3. In a separate bowl, beat the cream cheese with the granulated sugar until smooth and creamy.
  4. Scoop tablespoon-sized mounds of cookie dough, flatten slightly, and place a dollop of cheesecake filling in the center. Fold the dough around the filling and place on the baking sheet.
  5. Bake for about 14 minutes until edges are golden but centers are still soft. Allow to cool on baking sheet for 10 minutes.
  6. Drizzle with salted caramel sauce once cookies are completely cool.
