  1. Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish with cooking spray or a light coat of butter.
  2. Melt ½ cup of unsalted butter in a microwave-safe bowl and let it cool slightly. Whisk in 1 large egg, ¾ cup light brown sugar, and 1 teaspoon vanilla extract until smooth.
  3. Add 1½ cups of all-purpose flour and a pinch of salt to the wet ingredients, mixing until just combined.
