Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together chicken stock, soy sauce, honey, hoisin sauce, rice vinegar, and cornstarch until smooth. Set aside.
  2. Cut chicken into bite-sized pieces and toss with cornstarch until evenly coated. Set aside.
  3. Heat oil in a large skillet or wok to 350°F. Fry chicken in batches for 2-3 minutes until golden brown. Drain on paper towels.
  4. Sauté minced garlic and ginger in the same skillet for 30 seconds. Add cashews and stir-fry for an additional minute.
  5. Pour prepared sauce into the skillet, stir and cook until bubbling and thickened, about 2-3 minutes.
  6. Add fried chicken back to the skillet and gently toss to coat in sauce. Cook for an additional 1-2 minutes while garnishing with green onions.
