Step-by-Step Instructions
  1. Gather all ingredients. Crack eggs into a bowl, add salt, pepper, and milk, and whisk until frothy.
  2. Melt butter in a skillet over medium heat. Pour in the whisked egg mixture and stir gently until just set, about 3-5 minutes.
  3. In another skillet, cook breakfast sausage links over medium heat, turning occasionally until browned, about 4-6 minutes.
  4. Spray a clean skillet with cooking spray and warm tortillas for 15 seconds on each side until pliable.
  5. Lay a tortilla flat. Spoon scrambled eggs into the center, add sausage link, and sprinkle with shredded cheese.
  6. Roll the tortilla tightly around the filling, tucking in the sides. Place seam-side down in the skillet.
  7. Cook roll-ups seam-side down for 2-3 minutes until golden brown. Flip and cook 2-3 minutes on the other side.
  8. Remove from skillet, cool slightly, and serve with salsa or dip.
