Preparation
- Soak the breadcrumbs with milk for 5-10 minutes.
- Combine ground beef and pork in a mixing bowl, add soaked breadcrumbs, beaten egg, onion, garlic, Worcestershire sauce, Dijon mustard, thyme, rosemary, salt, and pepper. Mix gently.
- Shape the mixture into meatballs and place them on a lined baking sheet.
- Heat olive oil in a skillet and sear the meatballs for 2-3 minutes on each side until golden brown.
Cooking
- In the same skillet, sauté sliced onion and mushrooms until tender.
- Add minced garlic and cook for 30 seconds.
- Sprinkle flour over the vegetables, stirring for 1-2 minutes.
- Deglaze the pan with red wine, scraping the bottom.
- Gradually whisk in beef broth, Worcestershire sauce, tomato paste, salt, and pepper. Simmer for 15-20 minutes.
- Return meatballs to the skillet, cover with gravy, and simmer for 20-25 minutes.
- Adjust seasonings as needed before serving, garnished with parsley.
