  • 2 lbs Ground Beef 80/20 blend recommended for juicy flavor
  • 1 lb Ground Pork Can substitute with ground turkey
  • 1 cup Breadcrumbs Plain, unseasoned; gluten-free options work
  • 1/2 cup Milk Whole milk preferred
  • 1 large Egg Lightly beaten; flaxseed as vegan alternative
  • 1 medium Onion Finely chopped
  • 2 cloves Garlic Minced; adjust to taste
  • 2 tbsp Worcestershire Sauce For umami depth; soy sauce as substitute
  • 1 tbsp Dijon Mustard Provides tangy kick; yellow mustard as alternative
  • 1 tsp Dried Thyme Can swap with oregano
  • 1 tsp Dried Rosemary Crushed; fresh recommended
  • 1/2 tsp Smoked Paprika Can use regular paprika
  • Salt To taste

Gravy
  • 2 tbsp Olive Oil For searing meatballs
  • 4 tbsp Butter Can replace with olive oil for dairy-free
  • 4 tbsp All-Purpose Flour For thickening; cornstarch as gluten-free substitute
  • 4 cups Beef Broth Low sodium
  • 1 cup Red Wine Dry like Cabernet Sauvignon
  • 1 medium Onion Thinly sliced for the gravy
  • 8 oz Cremini Mushrooms Sliced
  • 2 cloves Garlic Minced
  • 1 tbsp Tomato Paste For sweet depth in gravy
  • 1 tbsp Fresh Parsley Chopped for garnish

Method
 

Preparation
  1. Soak the breadcrumbs with milk for 5-10 minutes.
  2. Combine ground beef and pork in a mixing bowl, add soaked breadcrumbs, beaten egg, onion, garlic, Worcestershire sauce, Dijon mustard, thyme, rosemary, salt, and pepper. Mix gently.
  3. Shape the mixture into meatballs and place them on a lined baking sheet.
  4. Heat olive oil in a skillet and sear the meatballs for 2-3 minutes on each side until golden brown.
Cooking
  1. In the same skillet, sauté sliced onion and mushrooms until tender.
  2. Add minced garlic and cook for 30 seconds.
  3. Sprinkle flour over the vegetables, stirring for 1-2 minutes.
  4. Deglaze the pan with red wine, scraping the bottom.
  5. Gradually whisk in beef broth, Worcestershire sauce, tomato paste, salt, and pepper. Simmer for 15-20 minutes.
  6. Return meatballs to the skillet, cover with gravy, and simmer for 20-25 minutes.
  7. Adjust seasonings as needed before serving, garnished with parsley.
