Preparation
- In a large mixing bowl, whisk together olive oil, lime juice, soy sauce, Mexican chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper to create the marinade.
- Cut the chicken breast into uniform cubes and add them to the marinade, ensuring each piece is well-coated. Cover the bowl or transfer to a sealed bag for marinating, refrigerate for at least 1 hour.
- Preheat your grill to medium-high heat, aiming for a temperature between 375°F–400°F. Oil the grill grates lightly using a paper towel.
- Soak wooden skewers in water for at least 30 minutes. Optionally, add colorful vegetables to your skewers.
- Once marinated, thread the chicken cubes onto the soaked skewers, leaving space between each piece.
- Place skewers on the preheated grill, cooking for 10–15 minutes, turning occasionally, until the chicken is golden brown and reaches an internal temperature of 165°F.
- Remove skewers from grill and let them rest for 5 minutes, then garnish with fresh cilantro and serve with lime wedges.
