  • 1.5 pounds Chicken Breast Cut into uniform cubes, can substitute with thighs for added juiciness.
  • Wooden Skewers Soak to prevent burning on grill.
For the Marinade
  • 1/4 cup Olive Oil Can substitute with avocado oil.
  • 2 tablespoons Lime Juice Can substitute with lemon juice.
  • 2 tablespoons Soy Sauce Use tamari for gluten-free option.
  • 1 tablespoon Mexican Chili Powder Replace with homemade spice blend if necessary.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika Regular paprika can be a substitute.
  • 1 teaspoon Garlic Powder Fresh garlic can also work.
  • 1 teaspoon Onion Powder Fresh onion can work well.
  • Salt Adjust to taste.
  • Black Pepper Adjust to taste.
  • 1 tablespoon Honey Maple syrup is a great alternative.
For Garnish
  • Fresh Cilantro Optional, adds freshness.

Method
 

Preparation
  1. In a large mixing bowl, whisk together olive oil, lime juice, soy sauce, Mexican chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper to create the marinade.
  2. Cut the chicken breast into uniform cubes and add them to the marinade, ensuring each piece is well-coated. Cover the bowl or transfer to a sealed bag for marinating, refrigerate for at least 1 hour.
  3. Preheat your grill to medium-high heat, aiming for a temperature between 375°F–400°F. Oil the grill grates lightly using a paper towel.
  4. Soak wooden skewers in water for at least 30 minutes. Optionally, add colorful vegetables to your skewers.
  5. Once marinated, thread the chicken cubes onto the soaked skewers, leaving space between each piece.
  6. Place skewers on the preheated grill, cooking for 10–15 minutes, turning occasionally, until the chicken is golden brown and reaches an internal temperature of 165°F.
  7. Remove skewers from grill and let them rest for 5 minutes, then garnish with fresh cilantro and serve with lime wedges.
