Ingredients
  

For the Steak
  • 1 lb Sirloin Steak Choose a tender cut for the best flavor.
  • 2 tablespoons Olive Oil Use extra virgin for best flavor.
  • 3 cloves Garlic Minced finely.
  • 2 tablespoons Lemon Juice Fresh.
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme
  • to taste Salt
  • to taste Black Pepper
For the Bowl
  • 2 cups Cooked Grains Brown rice, quinoa, or cauliflower rice.
  • 1 cup Cherry Tomatoes Halved.
  • 1 cup Cucumber Diced or sliced thin.
  • 1/2 cup Red Onion Thinly sliced.
  • 1/2 cup Kalamata Olives
  • 1/2 cup Feta Cheese Optional.
  • 1 tablespoon Fresh Herbs Parsley or Dill for garnish.
For the Tzatziki
  • 1 cup Greek Yogurt Substitute with coconut yogurt for dairy-free.
  • 1/2 cup Grated Cucumber Squeezed to remove excess moisture.
  • 1 tablespoon Honey Optional.

Method
 

Marinating and Preparing
  1. In a medium bowl, whisk together olive oil, minced garlic, lemon juice, dried oregano, thyme, salt, and black pepper. Coat the sirloin steak and marinate at room temperature for 30 minutes or up to 4 hours in the fridge.
  2. Rinse and grate cucumber for tzatziki, squeezing out moisture. Combine Greek yogurt, grated cucumber, lemon juice, and salt in a mixing bowl.
Cooking and Assembling
  1. Heat a cast-iron skillet over medium-high heat. Sear the marinated steak for 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes.
  2. Slice the steak thinly against the grain.
  3. Layer cooked grains in bowls, add sliced steak, cherry tomatoes, cucumber, red onion, and olives. Add feta, if desired.
  4. Drizzle tzatziki and vinaigrette over the assembled bowls, garnishing with fresh herbs.
