Method
 

Preparation
  1. Preheat your deep fryer or a large pot with vegetable oil to 350°F (175°C).
  2. In a skillet over medium heat, cook the chopped bacon until it's crispy, about 5 to 7 minutes. Drain excess grease.
  3. In a large mixing bowl, combine cooked bacon, finely chopped jalapeños, and softened cream cheese. Add chopped green onions if using and mix well.
  4. Take an egg roll wrapper, spoon about 2 tablespoons of filling onto one corner, and roll tightly, sealing edges with water.
  5. Carefully place the assembled egg rolls in the preheated oil in batches. Fry for about 4 minutes until golden brown.
  6. Remove the fried egg rolls from oil and place on paper towel-lined plate. Serve hot with sriracha or your choice of dipping sauce.
