  • 1/2 cup Extra Sweet Chili Sauce for dipping sauce

Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper until smooth and creamy.
  2. Add the chicken breast pieces into the marinade, thoroughly coating each piece. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill or grill pan to medium-high heat for about 10 minutes.
  4. Thread the marinated chicken pieces onto skewers, ensuring space between each piece.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until chicken is golden brown and reaches an internal temperature of 165°F (75°C).
  6. Combine additional sweet chili sauce with mayonnaise in a small bowl for dipping.
  7. Allow skewers to rest for a few minutes before serving. Serve with dipping sauce and sprinkle with chopped parsley or cilantro.
