Step-by-Step Instructions
  1. Begin by cutting boneless chicken thighs into bite-sized pieces, about 1-2 inches. In a bowl, season the chicken generously with freshly ground black pepper and salt, mixing well. Allow the chicken to marinate for at least 15 minutes.
  2. Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat until it shimmers.
  3. Once the oil is hot, add the marinated chicken pieces in a single layer. Sauté for about 5–7 minutes until golden brown and cooked through. Remove from skillet.
  4. In the same skillet, toss in the sliced onion and green bell pepper. Stir-fry for 2–3 minutes until soft.
  5. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  6. Return the cooked chicken to the skillet. Pour in soy sauce, oyster sauce, and sugar. Cook for another 2–3 minutes.
  7. Prepare a slurry by mixing cornstarch with water, then pour into the skillet while stirring to thicken the sauce for about 1–2 minutes.
  8. Season with salt and allow to simmer for an additional 3–5 minutes.
  9. Garnish with chopped green onions and serve hot over rice or noodles.
