  1. Prepare the kebab mixture by grating the onion and red bell pepper, squeezing out excess juices. Combine ground chicken, grated onion, red bell pepper, garlic paste, green chili, salt, paprika, chili flakes, and parsley in a mixing bowl. Knead well and refrigerate for at least 30 minutes.
  2. Assemble the kebabs by moistening your hands and molding portions of the chicken mixture around flat metal skewers into flattened sausage shapes about 1 inch thick.
  3. Preheat your grill over medium-high heat, lightly brushing with oil to prevent sticking and achieve a charred exterior. Aim for a temperature of about 400°F (200°C).
  4. Grill the kebabs on one side for about 5-6 minutes, then turn gently and grill for another 5-6 minutes until golden brown and internal temperature reaches 165°F (75°C).
