Ingredients

For the Kofta
  • 1 pound Ground Chicken Provides a lean protein base for your kofta.
  • 1 medium Onion Adds moisture and flavor depth; substitute with shallots for a mellow taste.
  • 3 cloves Garlic (minced) Enhances savory notes; adjust for milder flavor if desired.
  • 1/4 cup Fresh Parsley Adds freshness and a burst of color; swap with cilantro for a different flavor profile.
  • 1 teaspoon Ground Cumin Infuses warm, earthy notes; increase for a stronger aroma.
  • 1 teaspoon Ground Coriander Complements cumin with a citrusy essence; omit for a milder spice.
  • 1 teaspoon Salt Elevates all flavors, adjust based on dietary needs.
  • 1/2 teaspoon Ground Black Pepper Adds a hint of heat; freshly ground is best for optimal flavor.
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Forms the creamy base of the sauce; replace with Greek yogurt for thickness.
  • 2 tablespoons Freshly Squeezed Lemon Juice Brightens the sauce with acidity; lime juice works well as an alternative.
  • 1 tablespoon Olive Oil Used for grilling, adding richness.

Equipment

  • Grill
  • Mixing bowl
  • serving platter

Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, fresh parsley, ground cumin, ground coriander, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Wet your hands slightly and shape the mixture into small oval koftas, roughly 2–3 inches long. Place the shaped koftas on a plate and let them rest for about 10 minutes.
  3. Preheat your grill to medium-high heat (about 375°F / 190°C) and brush the grill grates with olive oil.
  4. Carefully place the koftas on the preheated grill, leaving space between each one. Grill for 10–12 minutes, turning occasionally to achieve a golden-brown exterior.
  5. In a separate bowl, mix the plain yogurt with freshly squeezed lemon juice and a pinch of salt until smooth.
  6. Once the koftas are cooked to perfection, transfer them to a serving platter. Drizzle or serve the garlic yogurt sauce on the side.
