Ingredients
  

For the Chicken
  • 1 lb Chicken Breast skinless, boneless
  • 1/4 cup Water or low-sodium chicken broth
  • 2 tbsp Shaoxing Rice Wine or dry sherry/mirin
  • 1 tsp Kosher Salt
  • 1/2 tsp Baking Soda
  • 1 tbsp Cornstarch or potato starch
  • 2 tbsp Neutral Oil e.g. vegetable, canola
For the Vegetables
  • 4 cups Mixed Vegetables e.g. broccoli, carrots, bell peppers
  • 3 cloves Garlic minced
  • 1 in Ginger minced or grated
For the Sauce
  • 1/4 cup Soy Sauce regular or low-sodium
  • 1 tbsp Granulated Sugar or brown sugar
  • 1 tbsp Toasted Sesame Oil optional but recommended

Method
 

Step-by-Step Instructions
  1. Slice the chicken breast into thin strips, combine with water, Shaoxing rice wine, kosher salt, and baking soda in a bowl. Marinate for 10-30 minutes.
  2. While marinating, whisk together 1/4 cup of water, soy sauce, sugar, cornstarch, and sesame oil in a bowl until smooth.
  3. Boil water in a pot, add mixed vegetables, blanch for 2-3 minutes, drain, and set aside.
  4. Heat 2 tablespoons of oil in a wok, add marinated chicken, sauté for 5-7 minutes until cooked through, then remove from wok.
  5. Add minced garlic and ginger to the same wok, stir-fry for 30 seconds until fragrant.
  6. Pour the prepared sauce into the wok, stir until simmering, then add the cooked chicken and blanched vegetables, mix well, and serve immediately.
