- Mix baking powder with a splash of water in a small bowl and pour this into the batter, stirring until combined.
- Add the olive oil and mix thoroughly to ensure it's evenly distributed.
- Pour the egg mixture into each muffin cup, filling almost to the top.
- Bake for 18-20 minutes until the tops are set and lightly golden.
