Method
 

Preparation

  5. Mix baking powder with a splash of water in a small bowl and pour this into the batter, stirring until combined.
  6. Add the olive oil and mix thoroughly to ensure it's evenly distributed.
  7. Pour the egg mixture into each muffin cup, filling almost to the top.
  8. Bake for 18-20 minutes until the tops are set and lightly golden.
  9. Cool in the muffin tin for 5 minutes before using a butter knife to release the bites.
