- In a mixing bowl, season 1 pound of ground chicken with salt and pepper. Form into four loose balls.
- Preheat a large skillet over medium-high heat for about 3 minutes, adding oil if necessary.
- Place the chicken balls in the hot skillet for 1-2 minutes, then press to form patties about 1/4 to 1/2 inch thick.
- Let the first side cook for 2-3 minutes without disturbing to develop a golden-brown crust.
- Flip each patty and immediately place slices of yellow American cheese on top. Cover with a lid for about 30 seconds.
- Continue cooking until internal temperature reaches 165°F (74°C).
- Remove patties and lower heat slightly. Toast brioche burger buns cut-side down for about 1 minute.
