Step‑by‑Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a 9"x13" baking dish with olive oil.
  2. Heat olive oil in a skillet over medium heat, add chopped onion and minced garlic, sauté for 2 minutes until fragrant.
  3. Add ground turkey, break it apart, and cook for 5-6 minutes until browned and no longer pink.
  4. Stir in diced tomatoes, dried Italian herbs, salt, and black pepper, and simmer for 3-4 minutes.
  5. Layer half of the zucchini slices in the baking dish, followed by half of the turkey mixture and half of the cheese.
  6. Repeat the layering with the remaining zucchini, turkey, and cheese.
  7. Bake uncovered for 30-35 minutes until the cheese is bubbly and golden.
  8. Let cool for 5 minutes before serving.
