For the Yakitori Sauce

  • 1/4 cup Mirin Can substitute with rice vinegar and sugar.
  • 1/4 cup Sake Dry white wine or apple juice may be used as substitutes.
  • 1 tablespoon Sugar

Method
 

Step-by-Step Instructions
  1. Soak bamboo skewers in water for at least 30 minutes to prevent burning during grilling.
  2. In a small saucepan, combine soy sauce, mirin, sake, and sugar. Heat over medium for about 5-6 minutes until sugar dissolves.
  3. Cut chicken thighs into bite-sized chunks and thread onto soaked skewers.
  4. Preheat the grill to medium-high heat, lightly oiling the grates.
  5. Grill skewers for 3-4 minutes on one side, brush with yakitori sauce, then flip and cook for another 3-4 minutes.
  6. Once cooked to an internal temperature of 165°F (75°C), remove from grill and serve with a side of steamed rice.
