- Soak bamboo skewers in water for at least 30 minutes to prevent burning during grilling.
- In a small saucepan, combine soy sauce, mirin, sake, and sugar. Heat over medium for about 5-6 minutes until sugar dissolves.
- Cut chicken thighs into bite-sized chunks and thread onto soaked skewers.
- Preheat the grill to medium-high heat, lightly oiling the grates.
- Grill skewers for 3-4 minutes on one side, brush with yakitori sauce, then flip and cook for another 3-4 minutes.
- Once cooked to an internal temperature of 165°F (75°C), remove from grill and serve with a side of steamed rice.
