  • 1/4 cup Soy Sauce can swap with tamari for gluten-free
  • 1/4 cup Mirin or mix of apple juice and rice vinegar
  • 1/4 cup Sake or apple juice and rice vinegar
  • 2 tbsp Brown Sugar or alternative sweeteners as desired
  • 1 tsp Ginger fresh or ready-made ginger paste
  • 2 cloves Garlic minced, adjust to personal taste
For Skewering
  • 10 Bamboo Skewers soak in water for at least 30 minutes

Method
 

Preparation Steps
  1. Soak bamboo skewers in water for at least 30 minutes.
  2. In a medium saucepan, combine soy sauce, mirin, sake, brown sugar, ginger, and minced garlic over low heat.
  3. Cut chicken thighs into bite-sized pieces and thread onto soaked bamboo skewers.
  4. Preheat grill pan over medium heat and cook skewers for 3-4 minutes on each side while basting with glaze.
  5. Let skewers rest for 5 minutes before serving.
