Preparation Steps
- Prepare the Tofu: Shred tofu, toss with oil, tamari, garlic, and cornstarch. Bake at 400°F for 25 minutes.
- Pickle the Veggies: Combine shredded veggies with lime juice, salt, and sugar. Let pickle for 10-15 minutes.
- Make the Sriracha Sauce: Whisk together vegan mayo, sriracha, lime juice, and maple syrup.
- Create the Stir-Fry Sauce: Mix tamari, hoisin, vinegar, maple syrup, garlic, ginger, sesame oil, and broth in a saucepan. Simmer and thicken with cornstarch slurry. Stir in tofu.
- Assemble the Wraps: On each tortilla or lettuce leaf, spread sriracha sauce, add greens, pickled veggies, and tofu. Roll tightly.
- Toast if Desired: Optionally toast wrapped tortillas in a skillet for 2-3 minutes on each side until golden.
