  • 2 tablespoons cilantro or parsley
  • 1/4 cup milk or non-dairy milk
For the Bread
  • 4 slices bread sourdough, multigrain, or whole wheat
For Serving
  • 2 tablespoons ketchup or hot sauce for a spicy kick
  • 2 tablespoons cilantro mint chutney store-bought or homemade

Preparation Steps
  1. In a wide mixing bowl, whisk together the large eggs, finely chopped red onion, minced green chili, ground turmeric, kosher salt, fresh cilantro, and milk until everything is smoothly combined.
  2. Take your chosen slices of bread and dip them into the prepared egg mixture. Let them soak for about 10-15 seconds per side.
  3. Heat a non-stick or cast-iron pan over medium heat, adding a teaspoon of oil to coat the bottom. Place the soaked slices of bread into the pan.
  4. Using a spatula, gently flip each slice of the Savory Masala French Toast, cooking the other side for an additional 2 minutes.
  5. Serve hot, alongside a small bowl of ketchup or coriander mint chutney.
