- In a food processor, blend together garlic, jalapeño pepper, tomato paste, cumin, paprika, oregano, fresh coriander, and lime juice until smooth. Allow to come together for about 1-2 minutes.
- Cut the chicken thighs into bite-sized pieces and place in a large mixing bowl. Pour marinade over chicken, ensuring each piece is evenly coated. Cover and refrigerate for at least 2 hours.
- If using wooden skewers, soak them in warm water for about 30 minutes before grilling.
- Thread alternating pieces of chicken with colorful bell peppers and onion chunks onto the soaked skewers.
- Preheat grill to medium heat, about 375°F (190°C). Place skewers on the grill and cook for approximately 15 minutes, turning every 3-4 minutes.
- Once cooked through, remove skewers from the grill and let them rest for a few minutes. Serve hot.
