Method
 

Cooking Instructions
  1. In a food processor, blend together garlic, jalapeño pepper, tomato paste, cumin, paprika, oregano, fresh coriander, and lime juice until smooth. Allow to come together for about 1-2 minutes.
  2. Cut the chicken thighs into bite-sized pieces and place in a large mixing bowl. Pour marinade over chicken, ensuring each piece is evenly coated. Cover and refrigerate for at least 2 hours.
  3. If using wooden skewers, soak them in warm water for about 30 minutes before grilling.
  4. Thread alternating pieces of chicken with colorful bell peppers and onion chunks onto the soaked skewers.
  5. Preheat grill to medium heat, about 375°F (190°C). Place skewers on the grill and cook for approximately 15 minutes, turning every 3-4 minutes.
  6. Once cooked through, remove skewers from the grill and let them rest for a few minutes. Serve hot.
