  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Turmeric
  • ¼ teaspoon Cayenne Pepper adjust for spice tolerance
  • ½ teaspoon Black Pepper
For Garnish
  • ¼ cup Fresh Cilantro can substitute with parsley
  • to taste Salt for seasoning

Method
 

Step-by-Step Instructions
  1. Prepare Eggplant: Cut the eggplant into cubes, sprinkle with salt, and let sit for 30 minutes to draw out moisture. Rinse and pat dry.
  2. Cook Vegetables: Heat 2 tablespoons olive oil, sauté onion for 5-6 minutes. Add bell peppers, cook for another 3-4 minutes.
  3. Cook Eggplant: Add eggplant to skillet, cook for 7-8 minutes until tender and slightly browned.
  4. Spice Mix: Add garlic, paprika, cumin, turmeric, and cayenne. Stir for 15 seconds to bloom spices.
  5. Create Sauce: Add crushed tomatoes and beef broth, simmer for 15 minutes and season with salt and black pepper.
  6. Prepare Meatballs: Mix sautéed onion mixture with spices, panko, egg, and beef. Form into meatballs and place on baking sheet.
  7. Bake Meatballs: Preheat oven to 375°F (190°C) and bake meatballs for 15-18 minutes.
  8. Combine and Simmer: Add meatballs to sauce, let simmer for 5-10 minutes before serving.
