For the Base
  • 4 eggs Eggs Can substitute with egg whites to reduce fat.
  • 1 cup Reduced-fat cheese Consider dairy-free cheese for a vegan option.
For the Sauce
  • 1/2 cup Passata Can use tomato sauce or marinara if preferred.
For the Topping
  • 50 grams Salami May replace with turkey or chicken sausage for a healthier option.
  • 2 tablespoons Mixed herbs Italian seasoning or fresh basil works well.

Equipment

  • Non-stick frying pan

Method

Step‑by‑Step Instructions for Pizza Eggs
  1. Begin by heating a non-stick frying pan over medium heat. Evenly spread a layer of reduced-fat cheese in the bottom of the pan, allowing it to melt and lightly crisp for about 2-3 minutes.
  2. While the cheese is melting, crack the eggs into a bowl. Using a whisk or fork, vigorously mix the eggs until they are smooth and slightly frothy.
  3. Once the cheese is melted to your liking, pour the whisked eggs directly over the melted cheese in the pan. Cover the pan and let it cook for 4-5 minutes.
  4. After the eggs have set, carefully use a spatula to flip the egg-cheese base. Cook for an additional 2-3 minutes until both sides are golden.
  5. Spread a layer of passata over the flipped egg, followed by salami slices and any additional toppings. Top with the remaining cheese and cover for another 2-3 minutes.
  6. Once the cheese is melted, gently slide your Pizza Eggs onto a plate. Sprinkle with mixed herbs and serve immediately.
