Step-by-Step Instructions for Shrimp Lo Mein
  1. In a large bowl, combine shrimp, cornstarch, salt, Shaoxing rice wine, and neutral oil. Let marinate for 10 minutes.
  2. In a separate bowl, whisk together oyster sauce, soy sauce, dark soy sauce, and granulated sugar until smooth and set aside.
  3. Bring a medium pot of water to a boil, then blanch the marinated shrimp for 30 seconds to 2 minutes until pink. Set aside.
  4. Cook lo mein noodles in the same pot according to package instructions, adding napa cabbage, carrots, and celery for the last 30 seconds.
  5. In a heated wok with neutral oil, sauté minced garlic for 30 seconds until fragrant.
  6. Add drained noodles and vegetables to the wok, pour in shrimp and Shaoxing rice wine, stir-fry for 2-3 minutes.
  7. Drizzle with toasted sesame oil and toss in chopped green onions before serving hot.
